Online assignments
Not all assignments can be turned in online; the teacher tells Canvas which assignments can accept online submissions. If the assignment can be turned in online, you'll see a "Submit Assignment" button on the right.

Clicking on the button will give you a dialog at the bottom of the assignment content for turning in your assignment. The teacher can also set up in what ways an assignment can be turned in, uploading files, giving a link to a website (like your portfolio or example work) or just let you copy and paste your writing.
You can attach multiple files by clicking "Add Another File". Hit the red X to remove a file you inadvertently added. Note: no files are uploaded to Canvas until you press "Submit Assignment" at the bottom of the upload dialog.
Now when you visit the assignment page, you'll see details about when you turned your assignment in. You can download a copy of the file the teacher will use and see the official time you turned it in. Any teacher comments will also be visible here.
